This is such a sweet little book with easy to follow recipes and very informative. It is not an in-depth book but a lovely taster which will make you want to learn more about the wonderful Elder!

Elderflower Cordial

This cordial is easy to make and absolutely gorgeous when diluted with sparkling spring water.

You will need:

30 fresh Elderflower heads, with the main stalks removed
2 oranges, roughly sliced
2 lemons, roughly sliced
1 lime, roughly sliced
75g citric acid (available from either a winemaking shop or your local chemist)
1.5 litres boiling water
1.8kg sugar (can use granulated or caster)
½ crushed Campden tablet (can be omitted – see below)

Instructions:

Place the water and sugar in a large pan and bring to the boil – stirring until the sugar is dissolved.
Add the orange, lemon and lime slices.
Stir in the citric acid – ensure it is totally dissolved.
Add the elder flower heads.
Cover and allow mixture to go completely cold.
Strain the mixture and add the Campden tablet.
Stir well and leave for 3-4 hours (stirring every hour to ensure Campden tablet has dissolved).
Pour into bottles.

Dilute to taste (at a ratio of 1:5).

This Cordial will keep for years if you are using the Campden tablet.  

If you are not going to use the Campden tablet, the Cordial will keep for several weeks in a fridge or you can store in plastic bottles in your freezer.
